Mirassou Cabernet Sauvignon
If you're a fan of chocolate (as many are), and you've always dreamed of a chocolate wedding dessert, pairing the dessert with Mirassou Cabernet is an excellent way to enjoy an intense chocolate flavor.
Cabernet Sauvignon is the best selling red varietal wine in America, and chocolate and Cabernet Sauvignon pairings are very popular. The chocolate items that are most popular with Cabernet are bittersweet and intense, such as chocolate truffles.
Like Mirassou Riesling, Mirassou Cabernet can also be enjoyed during the hors d'oeuvre hour, as well as lunch or dinner. A truffle or other intense chocolate bite after the entrée as a segue from dinner to a Riesling-friendly wedding cake is really special. It will give your guests a chance to savor Cabernet Sauvignon (if poured for the entrée course) in a different way before the cake. Truffle fillings such as cherry, cassis, port or nuts can complement key facets of the wine's character.
If the wedding cake itself is the chocolate element, go for a deeper chocolate profile, such as dark chocolate on chocolate cake, flourless chocolate torte, or other intense chocolate flavor. Bridge the flavor to the wine with dark fruit elements such as black cherry filling, or dark fruit coulis (puréed sauce) on the plate, and toasted nut elements as a bridge to toasted oak.
This pairing also could be adapted to petits fours and chocolate cupcakes for a whimsical approach that still has an elegant, luxurious feel.
